Easy Vegan Pancakes

My son loooves pancakes. On weekends, if you ask him what he wants for breakfast, no doubt it will be pancakes. 🙂

I made this recipe a couple of weeks ago, and it was simply mouth-watering, with a drizzle of maple syrup and fresh juicy strawberries on top. It’s easy to make and requires very little time too. 🙂


While everybody is still asleep, I love going into the kitchen and let my creativity run wild. And good news! They come together in 20 minutes, 1 bowl, completely from scratch! You will be the breakfast hero! 🙂


Fluffy, tender, sweet, they taste amazing and are simply delishhh!




Serves about 6 pancakes

This Recipe is: Dairy Free – Gluten Free – Soy Free – Vegan – Wheat Free



  • 1 flax egg (1 Tbsp flaxseed meal + 2 1/2 Tbsp water)

  • 1 Tbsp olive or melted coconut oil

  • 1 Tbsp maple syrup

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • pinch pink Himalayan salt

  • 1 cup coconut chocolate milk (or any other non-dairy milk of your choice)

  • 1 cup Quinoa flour (or any Gluten-Free flour of your choice)

  • 2 Tbsp Gluten-Free rolled oats




  1. In a small mixing bowl, add flaxseed and water and let set for a minute or two.

  2. In a large mixing bowl, add olive oil, maple syrup, baking soda, baking powder, and salt and whisk to combine. Add coconut chocolate milk and flax egg, and whisk again until well combined.

  3. Next add oats, quinoa flour, and stir until just combined, being careful not to over mix. Let batter rest for 10 minutes while you preheat your skillet.

  4. Preheat a large skillet on the stove stop. You want the surface to be hot, but the oil shouldn’t smoke when it makes contact with the surface.

  5. Lightly grease your skillet with oil of choice and pour 1/4 cup measurements of the batter onto the griddle. If your batter looks too thick, thin it with a little more milk.

  6. Flip when bubbles appear in the middle and the edges turn slightly dry, being careful not to burn.

  7. Cook for 1-2 minutes more on the other side and then top with a drizzle of maple syrup and fresh strawberries, or whatever else you please.
