Raw Apricot Granola Bars (No-Bake, Gluten-Free, Vegan)

 

Sweet and chewy with lots of seeds and nuts, crunchy… a super delicious and healthy snack, ready in less than 10 minutes.

I love opening my freezer and having a variety of healthy snacks to pick from. Either as an after-school snack for my son, or after a session at the gym, or even when travelling or on-the-go, having healthy options available makes it easy to avoid making bad food choices (and regretting it later on).

This recipe is one of our favorite! Hope you enjoy it too 🙂

 

Serves 12-16    

Ingredients

  • 1 cup Medjool dates, pitted

  • 1 cup dried apricots

  • 1/4 teaspoon cinnamon

  • 1 cup raw mix (pumpkin seeds, sunflower seeds, flaxseeds, walnuts, almonds, etc) + raw vegan chocolate pepitas  – according to your taste

 

Instructions

  1. Line a 8×8 or 9×9 square pan with parchement paper.

  2. Place dates, apricots, and cinnamon in a food processor, and process until the mixture forms a large mass.

  3. Break up slightly with a spatula, add raw mix and pepitas to the mixture in the food processor, and pulse until there are small chunks.

  4. Press the mixture into the prepared pan. You can cover the top with more paper and press an equal sized pan to roll the top with a glass to flatten completely.

  5. Refrigerate for 30-45 minutes, then slice into bars or squares. You can also freeze for up to a month (already sliced and ready to eat).
