REAL FOOD: Make your own Almond Milk and Cookies (Recipe)

 

Becoming a Raw Vegan has made me really see the importance of getting real, live food into my body. Real food that helps me cleanse my body and life. It’s all about listening to my body’s unique needs and going back to basics. And I’ve never felt better!

 

We are so overwhelmed with toxins, processed foods, additives, preservatives, chemicals in our foods – every day, more and more people are diagnosed with cancer, autoimmune diseases, anxiety, depression, unhappiness, and so much more. Our society is ill! The only way we can get better is by taking the responsibility for our health and help our body cleanse and detox by giving it REAL LIVE food.

 

I shop at a Natural Foods Store, thinking I am getting the best, healthiest products. But the other day, I was surprised when looking at the ingredients on the back of my Organic Almond milk… lots of stuff I could not even pronounce, and have no clue what they are. No way!!! While this milk substitute sounds good according to the claims on the package, the ingredients in this processed product tell a different story. Let’s have a closer look at some of them:

 

  • Locust Bean Gum and Gellan Gum are not recommended for people who have gut issues (I have Hashimoto hypothyroid, my gut needs lots of care and nurturing).

  • Natural flavour: This term conveniently eliminates the need to list unsavory additives on the ingredient list (it’s definitely a red flag). It could mean artificial sweeteners, or something else masked behind such a general term.

  • Vitamin D2: Some studies have shown that Vitamin D2 is a synthetic and isolated form of the vitamin and, as a result, is extremely poorly absorbed. It offers no viable benefit to the body and may actually be harmful. The natural vitamin D the human body produces from sun exposure, is D3.

  • Sunflower lecithin: a highly processed byproduct

I want to know EXACTLY what is in the food that I eat. That is why I prepare most of my food from scratch using the best ingredients I can find.

 

Making fresh homemade Almond Milk takes 5 minutes and requires no effort at all. So why am I getting “unknown” ingredients into my body? Plus, by making my own Almond milk, I get a BONUS! With the pulp, I made some amazingly delicious almond cookies (recipe below)!

ALMOND MILK

Ingredients:

    • 1 cup of almonds soaked overnight

    • 2 dates (pitted)

    • vanilla bean (or vanilla extract)

    • 3.5 – 4 cups of filtered water

 

All in blender, mix!

Enjoy this creamy organic almond milk!

 

ALMOND COOKIES

What we want to do, is take advantage of the remaining pulp. So we need to get a nut bag to separate the milk from the pulp. Use the pulp wet (do not dry it) as I find it makes the cookies even more yummie!

 

Pour in food processor:

    • 1 cup almond pulp

    • 1 banana (frozen)

    • 5 big dates (pitted)

    • 2 tbsp coconut oil

Mix until you get a “goey” texture and place in a bowl.

 

Add:

    • 1/2 cup of large coconut flakes

    • 1/2 cup soaked raisins (or cranberries)

    • 1/2 cup walnuts (chopped) – or seeds if you can’t have nuts

    • 1/2 cup raw cacao nibs

    • sprinkle of cinnamon

    • 1 tbsp agave nectar

 

Blend all together.

 

Make small bites (either round or flat cookies) and place in dehydrator for about 10 hours – they will get a little crust on the outside, and will be soft on the inside.  If you don’t have a dehydrator, you can use your oven, about 15-20 minutes at 400ºF.

 

It’s such a simple recipe ANYONE can accomplish this!!! 🙂
