Vegan Gluten-Free Coffee Biscotti

If you love coffee, then this VEGAN GLUTEN-FREE COFFEE BISCOTTI recipe is for you!!!

 

Here’s a secret… I looooove sweets! But I also want to make sure that I always have healthy options on hand and avoid making bad food choices. And this recipe is perfect! It’s Gluten-Free, Dairy-Free, Egg-Free and Refined-Sugar Free, and it’s pretty straightforward to make.

 

So whenever I get that little craving for something sweet, a biscotti and a cup of coffee or tea just makes my day 🙂

 

Makes: Approx. 8-10 biscotti

This Recipe is: Dairy Free – Gluten Free – Vegan – Refined Sugar Free

 

Ingredients:
– 1 cup raw almonds, finely grounded
– 3 tablespoons 100% pure raw cocoa powder
– 3 tablespoons raw coconut sugar
– 1 tablespoon oil (for this reciope I used avocado oil, but you can also use coconut oil)
– 3-4 tablespoons brewed coffee
– 1 teaspoon ground coffee (more or less according to your preference)

 

 Preparation:

  • Preheat oven to 400°F.

  • In a bowl, combine the ground almonds, cocoa powder, sugar, and ground coffee.

  • Add in the oil and the brewed coffee, and stir until a dough forms.

  • Put dough on baking sheet, and gently flatten out with your hands or spoon until you form a log that is approximately ¼-inch thick. Pro tip: if you feel like it’s getting sticky when you press down, wet your fingers or spoon with a little water.

  • Bake at 400°F for 15 minutes. Finished biscotti will have dark brown edges.

  • Remove from the oven and let cool. Once cool, cut biscotti and break them apart. Store in an airtight container.
