Vegan Gluten-Free Red Velvet Cupcakes

Is there anything so gorgeous as these vegan red velvet cupcakes? With Valentine’s Day approaching, I love baking a batch of these delicious Vegan GF Red Velvet Cupcakes, and delight the two most important men in my life 🙂  And it’s always a huge hit everytime I make them!

 

These cupcakes are not only super tasty but also super healthy. By using Red Beets, rich in nutrients, vitamins, and minerals, we also take advantage of all its benefits: controls our blood sugar levels, provides energy, manages weight, controls cholesterol, supports the brain function, beneficial for cancer prevention, and helps in treating diabetes.

Yields 12-14 regular sized cupcakes

Prep Time: 1 Hr

 

Ingredients

For the cupcakes

  • 3/4 cup freshly pureed beets (boiled until tender, then pureed)

  • 1/3 cup coconut oil

  • 1 1/4 cup coconut sugar

  • 1 1/2 tsp vanilla extract

  • 1 1/4 cup flour (I used a mix of oat and almond flour for this recipe)

  • 1/4 tsp pink Himalayan salt

  • 1 1/2 tbsp natural cocoa powder

  • 1 1/2 tsp baking powder

  • 1 cup almond milk

 

For the Frosting

  • 1 1/2 cups of soaked cashews

  • 1/2 a cup of coconut cream (can of coconut milk, in fridge overnight)

  • 3 tbsp of maple syrup

  • 10 drops of stevia

  • pinch of salt

 

Instructions

  1. Preheat oven to 350F.

  2. Mix the beet puree and oil until incorporated.

  3. Add sugar, vanilla extract.

  4. In a bowl, sift together flour, cocoa powder, salt, and baking powder.

  5. Alternate adding the flour mixture and milk until incorporated into the batter.

  6. Divide among cupcake liners, filling them 3/4 full, and bake for 20-25 minutes until a cake tester or toothpick comes out clean when poked in the middle.

  7. For the frosting, just add all ingredients in a highspeed blender, and blend until everything is completely emulsified. Pipe onto cupcakes as desired.

  8. Keep the cupcakes in the fridge and let sit at room temp at least 30 minutes before serving.
